Pan-Grilled Pork Steak with Truffle Gravy

One of the gastronomic highlights of this summer is our successful pork steak experiment. Whenever we craved for steak, we used to look for meat in the frozen beef section.Thanks to my boss, I learned that groceries also sell a special cut called pork steak.

To prepare the meat, we generously shower each side with freshly cracked pepper.  Marinate in Lea and Perrins worshorshor sauce for about 30 minutes inside the ref.

After several trials, we came down to our favorite pan-grilling methods.

I like my steak, pan-grilled for exactly 4 minutes on medium heat on each side.

Franco likes his steak ala Gordon Ramsey. Once blood stops coming out of the meat, that means one side is cooked and it is time to turn it over. Watch out for the blood again. When it stops oozing, you are done.

For the gravy, I used the same pan and  followed Panlasang Pinoy’s KFC-style gravy recipe. Once I reached my ideal consistency, I added a teaspoon of truffle oil. Yum!!! One afternoon, we did not have anything to eat for snacks so we ate rice with left over gravy. So so good! If only beef cubes were healthy, we’d make this gravy everyday.
