Go-Ahead-And-Lick-The-Mixing-Bowl Carrot Cupcake Recipe

1 stick butter, melted and cooled
3/4 cup sugar
1/4 cup brown sugar
2 eggs
1 1/4 cup flour
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
3/4 teaspoon baking powder
1/2 teaspoon baking soda
2 1/2 medium carrots, grated using the smallest holes

Preheat the oven at 180 degrees.
Line the muffin tin with cupcake liners. I often have to do this twice. For some reason, I keep forgetting not to put the lined muffin tin near the electric fan. The liners are blown away, to Aki’s delight and my dismay.

No need to dust that bulky  mixer. You can make this recipe using a standard whisk. Whisk melted butter, eggs and sugar until thoroughly combined.Add the remaining ingredients and mix well.

Now for the hardest part, restrain yourself and your kid from licking all the  batter. It is so good I tell ya.

Pour the batter into the cupcake liners. Bake for 15-18 minutes or until the inserted toothpick comes out clean.

The original recipe that I got from America’s Test Kitchen came with a frosting recipe. Since the cupcakes themselves were so good, I skipped the cream cheese and and enjoyed my unfrosted cupcakes.

This recipe makes 12 cupcakes.
